Cherry Rosemary Mushroom Chalupa Sandwich
Yo, as it heats up, the recipes start to heat up! I made this crazy cherry rosemary oyster mushroom sandwich using chalupa shells as the bread. I added some guacamole, sprouts, and secret sauce. This one is going down in history.

Ingredients
- 1 lb oyster mushrooms
- 4-5 sweet peppers
Cherry Rosemary Marinade
- 20-25 bing cherries
- 1/4 cup liquid amino
- 1 tsp black pepper
- 2 tsp smoked paprika
- 2 Tbsp balsamic vinegar
- 4-5 garlic cloves
- leaves from 2-3 rosemary sprigs
- 1/4 cup avocado oil
- 1 Tbsp stone ground mustard
- to taste salt
Additional Ingredients
- chalupa shells
- vegan shredded cheese (optional)
- sprouts OR microgreens
- guacamole
- sauce of choice
Directions
- Clean, remove stem, and deseed cherries
- Add Cherry Rosemary Marinade ingredients to a blender or food processor and blend until you have a smooth liquid
- Pull apart the oyster mushrooms into individual pieces. Place into a bowl. Add Cherry Rosemary Marinade to the bowl and allow the mushrooms to marinate for 1-2 hours, if possible. Save some of the marinade to brush on the mushrooms while grilling
- Preheat grill
- Add mushrooms and sweet peppers to the grill. Cook for about 5 minutes on each side. Brush mushrooms with marinade and repeat until you have your desired texture
- Chop mushrooms and sweet peppers together and place to the side
- Preheat ½ inch of avocado oil in a sauté pan. Add chalupa shell to the pan to quickly fry. Flip as soon as the shell is browned and crispy. Repeat until you have two shells for each sandwich. This recipe makes 4 sandwiches
- Build your chalupa sandwich with vegan cheese, sprouts, guacamole, mushrooms, and sauce.
