Calabrian Chili Morel Potato Stack Recipe
This was the first time I cooked with Morel Mushrooms, and all I can say is I am very impressed. It has been really hard to find this mushroom until I got my hands on Eden Foods Wild Hand Harvested Dried Morel mushroom. What I love about this product is that it has only 1 ingredient, is shelf stable, hand harvested, U.S. grown, chemical free, and the opportunity to have this culinary mushroom throughout the year. For this recipe, I made a red Calabrian morel crumble sauce to perfection on top of crispy potatoes, stacked on top of a creamy green onion cashew sauce, topped with grilled sweet potatoes, chives, and this delicious vegan cheese sauce. Calabrian Chili Morel Potato Stack Recipe
Ingredients:
Calabrian Chili More Sauce
- Red pepper sauce:
- 1/2 of grilled red pepper
- Smoked paprika
- 1/4 cup of Calabrian Chili pasta sauce or pizza sauce
- Salt and pepper to taste
- 1/2 cup of water
- 1 Tbsp of avocado oil
- 1 cup of soaked cashews
- Greek seasoning or salt to taste
Crispy Rosemary Potato Stack
- 4-5 potatoes
- Chopped chives
- Avocado oil
Flavor Sauce for Potatoes (Mix together to brush on potatoes)
- 1/4 cup of potato starch
- 3 tsp of onion powder
- 3 tsp of garlic powder
- 1 tsp of chopped dried rosemary
- 1/4 cup of veggie broth or water
- 3 tsp of avocado oil
- Salt to taste
Creamy Green Onion Cashew Sauce
- 1 cup of soaked cashews
- 5-6 fresh green onions
- Small handful of fresh cilantro
- Juice from 1/2 lemon
- 2 tsp of garlic powder
- 2 tsp of onion powder
- 1 cup of water
- Greek seasoning or salt to taste
Other Ingredients:
- Plant-based cashew cheese sauce or sauce of choice
- Roasted yellow sweet peppers
Directions
Instructions:
- Rinse and soak morel mushrooms for 30 minutes or until soft.
- Drain morels and chop into small pieces.
- Sauté chopped onions, red peppers, in avocado oil for 5 minutes.
- Add chopped morels and cook for 8-10 minutes.
- Add Greek seasoning and Calabrian chili pasta sauce.
- Mix and cover and cook on low for 5 minutes.
- Place to the side.
- Slice potatoes thinly and stack.
- Cut off edges.
- Create the flavor sauce and brush on the entire potatoes and stack.
- Bake at 360 degrees for about 45-50 minutes or until they are golden.
- Brush with avocado oil and add chopped chives.
- Build your stack with the green onion cashew sauce on the bottom and on top add the potato stack with the morel, roasted peppers, and cashew cheese sauce.
- Enjoy.
