Ingredients
- 2-3 sweet potatoes
- 1-2 Tbsp olive oil
- to taste salt & pepper
- 1/2 tsp smoked paprika
- black eyed peas
- rice of choice (I prefer forbidden rice)
- 1 tsp minced garlic
- vegan butter
- 2 bunches collard greens, chopped
- 1/4 cup liquid amino
- BBQ sauce OR preferred sauce
- crispy onions (optional)
Directions
- Dice sweet potatoes and toss to coat with olive oil, salt & pepper, and smoked paprika. Bake or air-fry until cooked
- While the sweet potatoes are cooking, cook black-eyed peas and rice. Set aside. TIP: If you prefer to use dried black-eyed peas, be sure to start the recipe in advance so you can soak them for at least 6 hours
- Sauté garlic and chopped collard greens in vegan butter for 6-8 minutes. Add liquid amino to the greens and cook for an additional 2-3 minutes. Set aside
- Build your soul bowl with sweet potatoes, black-eyed peas, rice, and greens. Top with BBQ sauce or sauce of choice. I also like to add a few crispy onions right before eating, for an added crunch.
Enjoy!
