Pink Oyster Mushroom Bacon BLT Sandwich
When I decided to go vegan, one of the first things that came to mind was, "What are you going to do about bacon???" In the initial phases of my transition, bacon and cheese were the two most challenging foods to let go of. Fast forward to today. I am blessed to see that the struggle was only temporary. Now we make bacon out of mushrooms and we don't miss the old stuff.

Shopping ListÂ
Ingredients
- 3/4 - 1 pound pink oyster mushrooms
- 2 Tbsp grape seed oil
- 2 Tbsp liquid amino
- 2 tsp smoked paprika
- 2 tsp onion powder
- to taste salt & pepper

Chipotle Aioli
- 1/4 cup vegan mayonaisse
- 2 Tbsp diced chipotle peppers in adobo

Additional Ingredients
- sandwich bread
- spring lettuce mix OR butter lettuce
- sliced heirloom tomato

Directions
- With a brush, clean the oyster mushrooms, if needed. Then pull apart the mushrooms.
- Add mushrooms to cast iron pan and cook on low. Use a cast iron press to cook the water out. of the mushrooms. Flip and repeat until all moisture is gone. Remove mushrooms from pan and set aside
- Mix grape seed oil, liquid amino, smoked paprika, onion powder, and salt & pepper in a large bowl. Add mushrooms to the bowl and mix to coat
- Increase pan temp to medium-low. Add the mushrooms to the pan and cook on both sides until they become crispy on the edges
- Mix together ingredients for Chipotle Mayo
- Build your sandwich with toasted bread, Chipotle Aioli, lettuce, heirloom tomato, and pink oyster mushroom bacon.
