Raw Lettuce Wraps w/ Pecan Carrot Grounds & Red Pepper Cashew Sauce

Shopping List 

PECAN CARROT GROUNDS

  • 1 cup soaked pecans (soak for 2-4 hours)
  • 8 sun-dried tomatoes (rehydrate in water for 2-4 hours)
  • 1 cup chopped carrots
  • 1 Tbsp chopped leek (or onion)
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp minced garlic
  • 1/2 tsp red pepper flakes
  • 1 tsp salt
  • 2 tsp lime juice

RED PEPPER CASHEW SAUCE

  • 1 cup cashews (soak for at least 1 hour)
  • 1 chopped red bell pepper
  • 1/4 cup gently packed cilantro
  • 2 Tbsp lemon juice
  • 2 tsp red pepper flakes
  • 2 tsp nutritional yeast
  • 1 tsp minced garlic
  • 1.5 tsp salt
  • 1 tsp black pepper

GARNISH INGREDIENTS

  • lettuce (butter OR romaine work well)
  • crushed kale chips
  • raw seeds

Directions

  • Combine Pecan Carrot Ground ingredients in a food processor until preferred texture.
  • Combine Red Pepper Cashew Sauce ingredients in a blender until you have a smooth, creamy sauce.
  • Build your tacos!
  • Top with crushed kale chips and/or raw seeds.
