Raw Lettuce Wraps w/ Pecan Carrot Grounds & Red Pepper Cashew Sauce

Shopping List
PECAN CARROT GROUNDS
- 1 cup soaked pecans (soak for 2-4 hours)
- 8 sun-dried tomatoes (rehydrate in water for 2-4 hours)
- 1 cup chopped carrots
- 1 Tbsp chopped leek (or onion)
- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp minced garlic
- 1/2 tsp red pepper flakes
- 1 tsp salt
- 2 tsp lime juice
RED PEPPER CASHEW SAUCE
- 1 cup cashews (soak for at least 1 hour)
- 1 chopped red bell pepper
- 1/4 cup gently packed cilantro
- 2 Tbsp lemon juice
- 2 tsp red pepper flakes
- 2 tsp nutritional yeast
- 1 tsp minced garlic
- 1.5 tsp salt
- 1 tsp black pepper
GARNISH INGREDIENTS
- lettuce (butter OR romaine work well)
- crushed kale chips
- raw seeds
Directions
- Combine Pecan Carrot Ground ingredients in a food processor until preferred texture.
- Combine Red Pepper Cashew Sauce ingredients in a blender until you have a smooth, creamy sauce.
- Build your tacos!
- Top with crushed kale chips and/or raw seeds.
