Açaí Coconut Donuts

I feel like I created my dream donuts with the traditional round shape, a crispy outside, a soft middle, lime icing, coconut shreds and a filling of açaí! For the filling, I used maple syrup, fresh pineapple, lime juice, and butterfly pea flower powder, which paired perfectly with the delicious Rio-style blend of Açaí and Guarana in the new Sambazon’s globes. I love using Sambazon’s products because they are Organic, Dairy-Free, Vegan, and Non-GMO. Shopping List 

Donuts ingredients:

  • 2 cups of organic flour
  • 2 Tbsp of butter
  • 1/2 tsp of salt
  • 1/1/2 tsp of Instant yeast
  • 1/2 cup of plant milk
  • 1/4 cup maple
  • Vanilla extract

Filling:

  • 1/2 cup of maple syrup
  • 1 + 1/2 cups of Sambazon Acai Original Acai Berry Puree & Guarana Blend
  • 1 + 1/2 cups of chopped Pineapple
  • 2 tsp of lime juice
  • 2 tsp of butterfly pea flower powder
  • 1/4 cup of tapioca starch mixed with 2 Tbsp of water

Lime Icing:

  • 1 1/2 cups of Organic Powder sugar
  • 1 Tbsp Butterfly Pea Flower powder

• 6 Tbsp Lime

Directions

  • Mix flour, salt and instant yeast in a bowl.
  • Mix melted butter, acai, plant milk and Vanilla extra  maple in a bowl. Combine with dry mix and knead into a ball
  • Combine with dry mix and knead for 5 - 8 min and then create a ball. Add to a bowl and cover with wet cloth. Allow to sit for 2 hours. 
  • Roll out and using donut cutter or a circle object to create your donuts rings. 
  • Add donuts rings to a pan and cover and allow to rise for 1 and half hours. Do not dry out. 
  • Add to pan with oil and fry at 350 degrees until brown and crispy on both sides. Allow to cool
  • Blend
  • Add all ingredients except tapioca for filling to saucepan and simmer on low heat for 10 minutes. Add water to tapioca and mix. Now add to filling and stir until it starts to thicken. Allow to cool and add to a filling piping. Fill from the bottom. 

• Mix all ingredients for icing in bowl. Dip top of donuts in icing  and set on try and allow to cool. Add coconut shreds on top and enjoy.
