For the Recipe Club, it was very important to me to provide the club members with a lot of easy-to-make, no butcher needed meats. This pepperoni is a special one! I hope you enjoy.

I love the taste of harissa with some crispy Lion's Mane bites. I used spelt flour and upgraded my batter for this remix of my OG Maple Garlic Skrimpz. Spelt flour is lighter and adds a nutty flavor. The texture is also really pleasant when fried.

I love nachos as a go-to quick meal and these do not disappoint. This recipe was originally a collaboration with Mylkdog Notcho Cheez, but you can use any vegan cheese you prefer. I have a cashew chipotle nacho cheese recipe that would go well with these nachos. You can find that recipe under Loaded Waffle Fries w/ Chipotle Cheese Sauce.

This recipe is part of my first e-book, "It's All About the Lion's Mane", but if you don't have access to Lion's Mane mushroom, or don't have any growing at home, you can easily swap it out for oyster or shiitake mushrooms. Before I started cooking with Lion's Mane & getting creative in the kitchen, the only Lion's Mane mushroom recipe I could find was for "crab cakes". Thankfully we have progressed, but you know I had to whip up a crab cake recipe as well. Enjoy!

Are you looking for a delicious appetizer to share with friends and family? You have to try this spin on wonton tacos. These tacos are topped with fresh mango salsa and a little spicy sauce. The combination of crunchy, savory, and a little heat will have you wanting more. The show's star is, of course, Lion's Mane mushroom. Lion's Mane absorbs all the flavors from the jerk marinade and is perfect as a meat substitute for this appetizer.

Before my vegan journey, my son and I frequented Panda Express for the Honey Walnut Shrimp. This was also back when I didn't know how to cook, so picking up food was the vibe. I was never a fan of the texture of shrimp, but I liked this dish because of the sweet sauce and the crunchy walnuts. Making this with Lion's Mane fixed the texture problem, so I can enjoy one of my old time favorites again!
