Strawberry Butterscotch Bars (Made with Beans)
Strawberry Butterscotch Bars made with beans. All I am trying to do is be kind to people, spread love, grow food, inspire others, and make bomb food with plants and mushrooms. I hope you enjoy this simple recipe. It is better than the other versions I have made with beans. There is a better balance and cleaner ingredients this round.

Strawberry Butterscotch Bar
- 1 x 15.5 oz can white beans, drained and rinsed (low OR no sodium)
- 1/4 cup oat flour
- 1/2 cup coconut sugar
- 1/4 cup brown sugar
- 1 Tbsp avocado oil
- 2 Tbsp plant milk
- 1 tsp apple cider vinegar
- 2 tsp baking powder
- 2 flaxseed eggs (2 Tbsp ground flaxseed + 6 Tbsp water)
- 3/4 cup chopped macadamia nuts
- Pinch of salt
Strawberry Glaze
- 1 + 1/2 cups freeze-dried strawberries
- 2 tsp lemon juice
- 7 Tbsp maple syrup
Extra Ingredients
• • Coconut shreds
Directions
Prepare the Bars:
- Add all ingredients for the bars in a blender except the chopped macadamia nuts.
- Blend until smooth.
- Stir in the chopped macadamia nuts.
Bake:
- Preheat the oven to 340°F (170°C).
- Line an 8 x 8-inch pan with parchment paper.
- Pour the bar batter into the pan and spread it evenly.
- Bake for 25 - 30 minutes.
Make the Glaze:
- Blend the freeze-dried strawberries, lemon juice, and maple syrup until smooth.
Finish:
- Once the bars are baked, spread the strawberry glaze on top.
- Sprinkle with coconut shreds.
- Enjoy!
