Smoked Truffle Creamy Morel Mushroom Past

I just harvested my first brandy wine tomatoes, and I made this fire-smoked pasta sauce that deserves to be served in restaurants and on every plate around the world! Check out the recipe below for the smoked mushroom pasta sauce.

Shopping List 

Smoked Mushroom Pasta Sauce: 

• 6 medium-sized Heirloom tomatoes (or regular tomatoes) 

• 2 Tbsp extra virgin olive oil 

• 1/2 onion 

• 3-5 garlic cloves 

• 3 tsp all-purpose Greek Seasoning 

• 1-2 tsp chili oil 

• 1 1/2 tsp date syrup 

• 1/2 cup soaked cashews 

• 2-3 Sweet bonnet peppers (optional) 

• Salt & Pepper to taste

Pasta & Toppings: 

• Seasoned ground morel mushrooms (or plant-based seasoned grounds) (Morel are expensive so you can swap it with Shitake mushrooms, but make sure to chop them very small and cook all the water out for the same texture!) 

• 1-2 tsp Truffle oil 

• Fresh basil 

• Fresh oregano 

• Pasta of choice 

• Vegan parmesan

Directions

• Add tomatoes, olive oil, onion, garlic, and sweet bonnet peppers to a pan. Smoke or broil for one hour. If broiling, cover with a lid. 

• Transfer the roasted ingredients to a blender and blend until extremely smooth. 

• Cook the Morel mushrooms or plant-based meat in a pan, seasoning to taste. 

• Pour the blended sauce over the mushrooms or meat. Cover and simmer on low heat for 10 minutes. 

• Add the cooked pasta to the pan and stir well to combine. 

• Remove the pan from the heat. Stir in the truffle oil, chopped fresh basil, and chopped fresh oregano. Plate and enjoy!
