Shredded Lion’s Mane + Lentils + Pumpkin Seeds

This meat replacement has protein from the lentils and pumpkin seeds, and it has a really nice texture. I made some fire tostadas and decided to share this recipe with my fam!

Shopping List 

Shredded plant-based ingredients: 

  • 1 cup of dehydrated lion’s mane or fresh lion’s mane
  • 1/4 cup pumpkin seeds
  • 1/3 cup lentils
  • 1/4 of a fresh onion
  • 2 - 3 cloves of garlic
  • 1 Tbsp of coconut amnio
  • 3 tsp of miso
  • 1 Tbsp of tomato paste
  • 2 Tbsp of avocado oil
  • 1 Tbsp of steak seasoning
  • 2 tsp of smoked paprika
  • 1/2 cup of vegetable broth

Other ingredients:

  • Toppings
  • Cilantro
  • Limes
  • Crispy onions
  • Feta
  • Garlic sauce
  • Chopped red pepper

• • Tostadas

Directions

  • Rehydrate lion’s mane mushrooms. Add hot water to the dehydrated lion’s mane. Allow to sit for 10 minutes.
  • Add all ingredients for the shredded plant-based meat except vegetable broth to a food processor and pulse until you have a shredded vibe. You may have to take a spatula to help make sure all the ingredients are mixed well.
  • Add to a pan with vegetable broth and simmer on low while stirring until most of the water is cooked out. The more oil cooked out, the better texture will be. (Simmer on low so it doesn’t burn)
  • Build your tostadas with all the ingredients and enjoy!
