Golden Oyster Mushroom Steak Sandwich
I hated mushrooms for most of my life now they are one of my favorite ingredients to cook with, add to broths, meat replacments, jerky, mushrooms powders, infused in oils, mushroom tea, seasonings, mushrooms coffee, dehydrated chips, and for wellness. We are just getting started. I get excited when it is grilling season and I can bust the grill out and add a nice mesquite flavor to perfectly charged mushrooms. This is one of those recipes you gotta try oyster mushroom steak, dog, using pretzel buns, grilled red yellow, orange, bell peppers, grilled red onions, flavorful mushroom marinade and a simple sunshine sauce made with cashews and topped with herbed plantbased cheese.

Shopping List
Ingredients:
- Golden oyster mushrooms
- Hoagie rolls
- 1/2 of grilled red bell pepper
- 1/2 of grilled yellow bell pepper
- 1/2 of grilled orange bell pepper
- 1/4 of grilled red onions
Mushroom Marinade:
- 3 Tbsp avocado oil
- 3 Tbsp tamari
- 1 1/2 Tbsp maple syrup
- 3 tsp garlic powder
- 3 tsp onion powder
- 3 tsp smoked paprika
- 1 Tbsp Worcestershire sauce
- Salt and pepper to taste
- Red pepper flakes (optional)
- 1 tsp cornstarch
Sunshine Sauce (Vibrant Yellow Sauce):
- 1/2 yellow bell pepper
- 1 1/2 cups soaked raw cashews
- 2 Tbsp apple cider vinegar
- 3 tsp garlic
- 1 Tbsp stone-ground mustard
- 1/2 tsp turmeric
- 1 Tbsp maple syrup
- Sea salt to taste
Directions
Instructions:
- Add oyster mushrooms to a grill or pan and cook on medium heat with nothing in the pan. Use a press or another pan to press the water out of the mushrooms. Remove from the pan and set aside.
- Prepare the mushroom marinade by mixing all the ingredients in a bowl. Pour the marinade over the mushrooms and let them marinate for 2-3 hours.
- Return the mushrooms to the grill or pan and cook for 5 minutes or until they have a nice crispy sear. Chop them into smaller bits.
- Grill the bell peppers and onions. Toast the bread.
- Assemble your sandwich as desired.
