Fire-Grilled Pizza Pocket Supreme

Just because you're cooking outdoors doesn't mean you have to sacrifice flavor and texture. This recipe turns out perfectly with the rich flavors of walnuts, mushrooms, and hearty organic firm tofu. If you don’t have a pie iron, no stress because you can make a regular pizza pocket using the same ingredients and bake it in the oven.

Shopping List 

Pizza Filling:

  • 1 block Hodo Organic Firm Tofu
  • 5–6 button mushrooms
  • 1/2 cup soaked walnuts
  • 3 tbsp tamari
  • 3 tsp smoked paprika
  • 1 tsp fennel seeds
  • 1 tbsp avocado oil
  • 2 tsp balsamic vinegar (optional)
  • 1 tbsp aglio olio seasoning (or a mix of Italian seasoning, garlic powder, chili flakes, and salt to taste)
  • 1/2 cup vegetable broth
  • 1/4 grilled red onion, chopped
  • 3 grilled sweet peppers, chopped
  • 1 sliced and grilled jalapeño

Pizza Toppings:

  • Pizza sauce of your choice
  • Plant-based mozzarella cheese shreds
  • 1 sliced and grilled jalapeño
  • Grilled button mushrooms
  • Fresh basil leaves

Other Ingredients:

  • Premade or homemade pizza dough

Directions

  • Pulse soaked walnuts, mushrooms, tofu, tamari, smoked paprika, fennel seeds, avocado oil, balsamic vinegar, and aglio olio seasoning in a food processor until slightly chunky.
  • Grill red onion, sweet peppers, jalapeño, and mushrooms. Place to the side.
  • Cook tofu mixture in a pan with vegetable broth until liquid evaporates. Stir in grilled onion and peppers. Set aside.
  • Coat pie iron with avocado oil. Layer pizza dough, sauce, mozzarella, filling, and more mozzarella. Seal with dough, brush with oil, and sprinkle with herbs.
  • Grill for 5 minutes on each side, flipping every 5 minutes. Brush with oil and herbs if needed.
  • Remove, top with sauce, mozzarella, mushrooms, jalapeños, and basil. Enjoy!
