Bruschetta Walnut Burger

Noting like a good burger, and just because we are eating only plants and mushrooms doesn’t mean we have to miss out. Bruschetta is normally rubbed on bread, so it goes perfectly in this sandwich. The combination of the flavorful walnut patty with plant-based cheese, bruschetta, pickles, onion rings, sprouts, and jalapeño sauce makes this sandwich packed with flavor that will leave you coming back for one more.

Shopping List 

Burger Ingredients:

  • 1 cup of soaked walnuts
  • 15 - 20 slices sautéed bella mushrooms
  • 1/4 cup of cooked steel-cut oats
  • 1/4 cup of chickpea flour
  • 3 Tbsp of coconut amino or tamari
  • 3 tsp of smoked paprika
  • 3 tsp of garlic powder
  • 2 tsp of cumin 
  • 1 Tbsp of miso
  • 1/4 cup of grilled chopped carrots
  • 1/3 cup of grilled chopped red onions
  • 1/3 cup of grilled chopped sweet peppers
  • 2 Tbsp flax + 5 Tbsp of water
  • 1/2 cup + 2 Tbsp panko 
  • 1 1/2 tsp of psyllium husk (Optional - Binder)
  • 1 + 1/2 avocado oil

Burger ingredients:

  • Bruschetta spread
  • Burger buns or lettuce wraps
  • Pickles
  • Jalapeño sauce or sauce of choice
  • Onion rings 
  • Melted vegan cheese or cashew cheese sauce

• • Sprouts

Directions

  • Grill bell pepper, carrots, and onion. And place to the side.
  • Create a flaxseed egg, soak walnuts, grill mushrooms, and cook steel-cut oats. Place all to the side.
  • Add walnuts, mushrooms, steel-cut oats, chickpea flour, miso, coconut aminos, paprika, garlic powder, to a food processor. Pulse until you have small crumbles. 
  • In a bowl, add the mixture, chopped grilled veggies, flax seed egg, panko, and psyllium husk. Mix and allow to rest and set for 10 minutes before forming your patties. 
  • Add a little avocado oil to pan and cook patties on medium until you have your desired level of cooking. 
  • Build your sandwich and enjoy
