Black-Eyed Peas & Greens
I remember playing basketball at my neighbor's house and I could smell my mom cooking up some Black-Eyed Peas & Greens from the basketball court. I feel blessed that I can recreate this dish and make it vegan.

Shopping ListÂ
Ingredients
- 1 x 16oz bag dried black-eyed peas
- 1 Tbsp vegan butter
- 1/2 chopped white onion
- 1 chopped green bell pepper
- 1 Tbsp minced garlic
- 4 links chopped vegan chipotle sausage (I like Field Roast)
- 6 cups vegetable broth
- 1 bunch chopped collard greens
- 2-3 drops liquid smoke
- 8oz vegan cream cheese
- 1/2 - 1 Tbsp creole seasoning

Garnish Ingredients
- crispy fried jalapenos

Directions
- Rinse black-eyed peas well. Soak overnight.
- Using vegan butter, sauté onions, green peppers, garlic, and chopped chipotle sausages for 4-5 minutes. Put to the side
- To a crockpot or large pot, add black-eyed peas, vegetable broth, collard greens, liquid smoke, cream cheese, creole seasoning. and sausage mixtureÂ
- Cook on low-med heat until black-eyed peas are soft. Serve with crispy jalapeños
